Flat Mountain Farm invites you for an unforgettable evening with celebrated chef Fuyuhiko Ito, a culinary force whose work bridges tradition and innovation through masterful technique, refined flavor, and a deep reverence for the artistry of Japanese cuisine.
Born in Tokyo and trained across Japan and Europe, Ito brings more than 40 years of experience to the table. He built his foundation in the rigorous kitchens of Tokyo's Chateau Lion, training in classical French technique before immersing himself in the art of sushi under Master Chef Kono in Kyoto. His approach honors seasonality, precision, and the natural integrity of premium ingredients, including his signature use of non-oxidizing knives to preserve the purest possible flavor in every cut.
In Atlanta, Ito founded UMI Buckhead, which earned a place among the top 20 sushi restaurants in the United States, hosted a celebrated James Beard dinner, and raised over $1 million annually for charity. He also led the kitchen at MF Buckhead, earning a five-star rating from the Atlanta Journal-Constitution. He now brings that same vision to Midtown Atlanta with three new concepts: ISHIN, an intimate 16-seat omakase counter; Celestia, a curated rooftop lounge; and Sozou, a contemporary Japanese restaurant featuring sushi, robata-grilled fare, and inventive dishes for a broader audience.
For Slow Season at Flat Mountain Farm, Chef Ito will present a multi-course, family-style menu rooted in seasonal bounty and refined by a lifetime of technique, where pristine seafood, intensive preparations, and harmonious flavors come together in every dish.
An expertly paired beverage menu is included in the ticket price and will be curated by our Head of Hospitality, Caleb Irby.
