Flat Mountain Farm invites you for an unforgettable evening with celebrated chef Fuyuhiko Ito, a culinary force whose work bridges tradition and innovation through masterful technique, refined flavor, and a deep reverence for the artistry of Japanese cuisine.

Born in Tokyo and steeped in the discipline of Japan’s storied food culture, Ito’s culinary journey spans more than three decades, from early days working with fresh seafood at Tokyo’s markets to shaping elevated Japanese dining in the United States. A revered figure in Atlanta’s restaurant scene, he has led iconic kitchens including Umi and MF Buckhead, earning regional acclaim for his elegant sushi and thoughtful, ingredient-driven menus. Ito’s approach honors technique, seasonality, and the natural integrity of premium ingredients, a philosophy that has informed everything from omakase counters to dining experiences at the nation’s most respected venues.

In Midtown Atlanta, Ito now helms ISHIN, an intimate 16-seat omakase counter atop the Ten Twenty Spring building, where he engages diners directly with personal, seasonal creations—crudo, nigiri, yakizakana and more—that reflect his signature precision and creativity. Adjacent to ISHIN, the rooftop lounge Celestia offers a curated cocktail and wine program that complements Ito’s culinary vision. On the ground floor, his forthcoming concept Sozou will expand upon his exploration of contemporary Japanese cuisine with sushi, robata-grilled fare, and inventive dishes crafted for a broader audience.

For Slow Season at Flat Mountain Farm, Chef Ito will present a multi-course, family-style menu rooted in seasonal bounty and refined by his lifetime of technique—where pristine seafood, intensive preparations, and harmonious flavors come together in every dish.

An expertly paired beverage menu is included in the ticket price and will be curated by our Head of Hospitality, Caleb Irby.
